I had an idea! Take one of my favorite dips and turn it into a dinner with chicken!

For this recipe, you can use either ground chicken or cut up diced chicken. I’ve even made this in the slow-cooker. Just add everything to the slow-cooker (including the raw CUBED chicken), cook on high for 3 hours and it’s ready! Top with mozzarella, and you have a meal. We did this exact thing on our last Panama Beach trip. While we were at the beach, our yummy dinner was cooking in the condo.

Some spinach artichoke recipes called for mayo or sour cream, but this is totally optional. I’ve made it with and without it, and both came out just the same, so if you don’t have these ingredients, it’s totally fine. Therefore, I didn’t even include those ingredients in this final recipe.

It’s a low-carb meal without the chips, so you can figure out some other options for serving if you’re sticking to low-carb. You can serve over zucchini pasta, or just serve on the side of raw or roasted cauliflower.

This would also make for a GREAT party dish!

Cook the onions, garlic, and seasoned ground chicken or cubed chicken until fully cooked (save the broth created by the chicken, do not discard).

Add the rest of the ingredients (except mozzarella), give a little stir, and bake at 400 for about 10 minutes until everything begins to melt.

Spinach Artichoke Chicken Bake | 30-Minute Meal | Low-Carb

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 12-15

Ingredients

  • 2 lbs ground chicken (or cubed chicken breasts)
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • Salt & Cajun Seasoning
  • 2 small jars/ 1 large jar Artichokes (drained)
  • 10-12 oz frozen spinach or 1-2 cans of spinach (drained)
  • 8 oz cream cheese, cubed
  • 1-2 cups mozzarella
  • 1/2 cup Parmesan (grated or shredded)
  • 4-5 squirts LA hot sauce

Instructions

    30-Minute Bake Option
  1. In an oven-safe, medium pot, Cook the onions, garlic, and seasoned ground chicken or cubed chicken until fully cooked (save the broth created by the chicken, do not discard).
  2. Add the rest of the ingredients (except mozzarella), give a little stir, and bake at 400 for about 10 minutes until cream cheese is melted. Salt as needed.
  3. Top with mozzarella and return to oven until melted, hot, and browned (about 10 minutes)
  4. Slow-Cook Option:
  5. Use cubed chicken breasts for the slow-cooker option. Season the breasts first with salt and cajun seasoning.
  6. Add all ingredients except mozzarella, and give it a gentle stir.
  7. Cook on high for 3 hours or low for 5-6 hours.
  8. Gently stir as to not break up the chicken too much. Top with mozzarella and cook until cheese melts. Salt as needed and Serve!

I’m asked very often how I do my bun! Here it is I’m asked very often how I do my bun! Here it is! I have really fine/thin hair, so a big messy bun doesn’t work at all — It’s actually impossible. 

I call this the messy-dressy bun, and it saves me on those messy hair days (or on that 3rd day of not washing 😉). It takes about 5-8 minutes (once mastered); it makes it look like I actually have hair; like I took time to fix it; and decent enough for either a nice dinner, an important meeting, or just for working out or jumping on the trampoline at DaSwamp and pulling a muscle😆. Ask me how I know.
It works for everythinggggg. 

*You’ll need a hair tie/rubber band about 6 bobby pins, and hairspray (and maybe some dry shampoo if you’re on that 3rd day too). Enjoy!!

We made a decision to sell our manufactured/mobile home and continue to pay off debt the way @daveramsey teaches. But instead of buying again right away, our tough decision was to rent for 1 year, no more than 2 years (Even though we could’ve been approved for another house). ⠀

We bought a house the smarter way this time - Making sure we were in a better position to buy a house - the house and land we really wanted - not just some house we could get just to get it. We made sure we waited until we had NO other debt, a clean slate. ⠀

The hard-road-less-traveled destination is SO worth it!! And so glad we waited for the right house to buy instead of being hasty! We love our little piece of country on the bayou😭🏡🐓🐂🐐🐟🐊⠀
